There’s nothing like a home-made Reuben Sandwich served with home-made chips for lunch! I’m not sure why I always forget about how much we LOVE this meal, but when I remember, its a GOOD day! Not to mention, my hubby is so excited when he sees this is what I’m serving up!
Ingredients
Pepperidge Farm Rye & Pump Bread
Chipped or Sliced Corned Beef
Baby Swiss Cheese (or regular Swiss)
2 tbsp Butter
Sauerkraut
Homemade 1000 Island Dressing: 1 cup Light Mayo, 1/4-1/3 cup Ketchup, 2 Tbsp. Relish, Salt
Directions
- Heat Sauerkraut in separate pan until Warm.
- Butter Bread
- On bread, layer 1000 island dressing, Swiss cheese, corned beef, sauerkraut, and top with other bread slice.
- Using a Panini Maker or George Foreman Grill, cook sandwich until golden brown and hot.
Serve with pickle slices and home-made chips!
I hate to see the leaves falling off the trees… if only we could live in this season year round!
