Home-Made Corned Beef Reubens & Chips

There’s nothing like a home-made Reuben Sandwich served with home-made chips for lunch!  I’m not sure why I always forget about how much we LOVE this meal, but when I remember, its a GOOD day!  Not to mention, my hubby is so excited when he sees this is what I’m serving up!

Ingredients

Pepperidge Farm Rye & Pump Bread

Chipped or Sliced Corned Beef

Baby Swiss Cheese (or regular Swiss)

2 tbsp Butter

Sauerkraut

Homemade 1000 Island Dressing: 1 cup Light Mayo, 1/4-1/3 cup Ketchup, 2 Tbsp. Relish, Salt

Directions

  1. Heat Sauerkraut in separate pan until Warm.
  2. Butter Bread
  3. On bread, layer 1000 island dressing, Swiss cheese, corned beef, sauerkraut, and top with other bread slice.
  4. Using a Panini Maker or George Foreman Grill, cook sandwich until golden brown and hot.

Serve with pickle slices and home-made chips!

I hate to see the leaves falling off the trees… if only we could live in this season year round!
