The most perfect & easy Thanksgiving Day Breakfast

I love to cook a delicious breakfast on Thanksgiving morning but if you’re hosting Thanksgiving Dinner, the last thing you want to do is wake up and cook a gourmet breakfast all the while making a mess in your kitchen.  This was so easy to put together, not to mention, the clean up was, well, there was no clean up!  Everything went straight in the dishwasher & I was one happy mama!  This will be a perfect start to Thanksgiving Day!  I can already picture us in our Pj’s watching the Thanksgiving Day Parade, sipping coffee and eating my…

~ Baked Pumpkin French Toast ~

* OK, I went a little happy with the Powdered Sugar *

Ingredients

6 large eggs

1 1/2 tsp vanilla extract

2 1/2 tsp. cinnamon

1/2 tsp ground cloves

1/4 tsp ground nutmeg

1 Tbsp sugar

16 oz. Can Pumpkin Puree

1 loaf Italian Sandwich Bread, cut into 1 inch pieces

1/3 cup Brown Sugar

2 tbsp butter cut into small pieces

Directions

  1. Preheat Oven to 350 degrees & Grease 9×13 baking dish
  2. In large bowl, whisk together eggs, vanilla, cinnamon, cloves, nutmeg & white sugar.
  3. Beat in pumpkin until fully mixed together
  4. Arrange bread in the baking dish then pour pumpkin mixture over bread cubes
  5. Gently toss then sprinkle brown sugar on top evenly.
  6. Cut butter into tiny pieces and drop on top of mixture
  7. Bake 30 minutes

Don’t ask… The boys are super into their snowflake plates right now.  (well, since July)

    I love breakfast casseroles- especially for a crowd! I can’t wait to try this Angelique. I can use gluten-free bread for my husband who is gluten intolerant. YUM!
