Mexican Tostadas & Homemade Guacamole

I had a long day today and battled through yet another huge meltdown from my man Rocco.  Boy, does he know how to throw a good tantrum at 4.  In the end, I won and that’s all the matters.  Or is it?  All over a thing of hand-cream… don’t ask.  I started cooking at 6pm (we usually eat at 5:30) but dinner was on the table by 6:30 and it was great!  Mexican Night.  I found Tostadas at Trader Joes and their own brand of Taco Seasoning Mix.  Don’t buy the seasoning mix if you have little kids – its incredibly spicy and you’ll blow fire out of your mouth!  I also cooked with ground chicken tonight (something I don’t often do) but it sure was tasty and if you don’t like ground chicken, you can certainly make this dish with ground turkey, ground beef or even shredded chicken!

Mexican Tostadas

Ingredients:

1 package Tostadas

EVOO

1 Onion, Diced

1-1 1/2 lb. Ground Chicken

1 Packet Taco Seasoning Mix

Toppings of your choice: lettuce, tomato, cheddar cheese, green onion, cilantro, salsa, sour cream, guacamole

Directions:

In large saute pan, heat evoo.  Add diced onion then meat.

Cook meat until just about done and add taco seasoning mix and water.

Cook until meat is done & sauce is thick & bubbly.

To Plate: Put tostadas on the plate & top with lettuce, meat, cheese, green onion, tomato, salsa & guacamole!

 I’m also starting to think its time I measure my recipes if I ever plan to write a cook book.  I’m definitely getting better at eye-balling ingredients and figuring out what a recipe needs by tasting as I cook.  Especially when I make Homemade Guacamole!  I used to measure exactly and now, I don’t even think I have a recipe.  I taste and add and shake and add again… You need a bowl of fresh guacamole when its Mexican Night!  Try my Guacamole recipe & I’ll try to give you measurements!

Ingredients

3 Ripe Avocados

5 or so Green Onions, chopped

4 cloves Garlic, minced

1/2 Lemon, squeezed

1/2 Lime, squeezed

Splash of Hot Sauce

Handful of Cherry Tomatoes, halved

Handful of Cilantro

S&P

Directions

Mash Avocados in bowl.

Add garlic, lemon, lime, hot sauce, s&p and mix.

Add green onion, tomatoes, cilantro and fold in!

Taste and add more of whatever you feel it needs more of.  Sometimes its the lemon/lime, sometimes its a dash of hot sauce.  As for me?  I always love more cilantro!

    Oh Em Gee! I love love Mexican food.. but too bad i can’t eat dairy now so i have to buy lactose free cheese which cabot makes.. i will try to make this soon :)
