Thai Peanut Salmon Salad

I just purchased my 2nd bottle of San-J Thai Peanut Sauce and made this delicious Salmon Salad!  If you know me, that’s a pretty big deal considering I don’t cook much with bottled marinades, dressings or sauces.  Nothing against them, I just like to attempt making dressings from scratch.  I came across this marinade while looking for Asian Noodles in Giant Eagle!  Its the perfect blend of sweet and spicy, has a delicious peanut flavor and I highly recommend it!  I’ve put it on chicken and vegetable dishes and this time, a salmon salad – Its so good!  Look for this bottle next time you go grocery shopping:

 

Ingredients & Directions

1 lb. Wild Salmon, marinated in San-J Thai Peanut Sauce

- I broiled the salmon for this salad but it would be great grilled too!

Salad:

2 heads Romaine Lettuce, chopped

1 package White Mushrooms, sliced

5-6 Carrots, shredded

1 seedless Cucumber, sliced

1 Avocado, sliced

Handful of Fresh Cilantro

1-2 Tbsp. Oriental Noodles, sprinkled on top

San-J Thai Peanut Sauce, drizzled on top of salad

 

For an after dinner treat, try this healthy and delicious Blueberry Frozen Yogurt!

    Oh. My. Gosh. My hubby and son love salmon, but we can barely get our son to eat salad. I think this might just be the dish that gets him to eat salad! Can’t wait to try this recipe! Thanks for sharing, Angelique!

      This dish will DEFINITELY get him to eat salad! ;) Roman doesn’t like salad but he ate the salmon, avocado, carrot sticks, cucumber… it was great! ;)
