Mexican Stuffed Peppers

I threw together this dish last minute and my whole family loved it!  The ingredients were similar to what I put in my burritos but instead, stuffed in a green pepper and baked!  Topped with fresh cilantro and a dollop of sour cream ~ A hit with everyone and super easy!

Ingredients

4 Green bell peppers

1 lb. ground beef or ground turkey (I used ground turkey)

1 can Red Kidney Beans, drained & rinsed

1 yellow Onion, diced

2 cloves Garlic, minced

1 Tomato, diced small

Handful of Cheddar Cheese

1 Taco Seasoning Packet or 1/4 c Taco Seasoning (+ 2/3 c water)

Directions

Preheat Oven to 350

In a large skillet, brown meat on medium high heat.  Sprinkle with S&P and halfway through cooking, add onions and garlic.

Add beans and tomato and saute for a couple minutes.

Add taco seasoning & water.

Turn heat to medium low and while mixture is cooking, cut the tops off of the green peppers and clean out the inside.

Spoon skillet mixture into peppers and place in baking dish.

Top with Cheddar Cheese and loosely cover with foil.

Bake for 30 minutes.

Garnish with Sour Cream & Fresh Cilantro and Serve over white, brown or Spanish rice!
