Chinese Chicken Salad

mmmm… I can’t think of a better Summer salad!

The boys and I spent the day at the pool and this was all I could think about making for dinner after such a hot afternoon!  We stopped at Giant Eagle because I only had maybe 2 of the salad ingredients in my home and let me tell you, our trip was a disaster in and of itself.  First of all, Giant Eagle needs to get about 15 more car carts (seriously).  First, we had to walk the entire parking lot looking for one in 93 degree heat and had no luck.  I ended up finding one of those carts that had 2 seats attached to the handle and both of the boys bums didn’t even fit on the seats.  Roman’s seat-belt was broken and Rocco looked like a 10 year old in a 1 year old seat with food on his mouth (from God knows what… maybe something in the car?)  People were staring at me trying to maneuver the cart through the parking lot and into the working crowd at GE and by the time I got to the Ramen Noodles, the wheels gave out (as did my arms).

One woman got a good laugh at us and I almost made a bet with her that I could shop for her entire 2 page long grocery list faster than she could cart my boys around and retrieve the 6 items I needed. 

She passed me before I could open my mouth.  Since we ditched the cart, I obviously needed help with the food & Rocco just loved throwing my Cran-Raisins in the air while Roman put my Sliced Almonds on the shelf without me knowing until I got to the Stone Ground Mustard.  FUN.  Both of the boys couldn’t dodge a cart for the life of them and tripped over their $3 flip-flops at least 7 times during the trip.  I was determined to make this salad and we accomplished our Chinese Chicken Salad trip in a whopping 50 minutes.  Yep! 50.  (I ran into someone too- cut me a *little break)  You’ve had one of those trips too, right?  Where it takes you what feels like all day to buy a handful of items?

It was worth it though… Look at the goodness!

Chinese Chicken Salad

Salad Ingredients

1 lb. boneless, skinless chicken breasts: Cooked & Cubed

1 Bag of Coleslaw Mix (the bag that has cabbage & carrots in it)

1 Bunch Green Onions, diced

1 Bunch Cilantro

1 large Tomato, diced

1 Cup or handful of CranRaisins

1 handful Sliced Almonds

1 Package Ramen Noodles (use just the noodles & break apart)

Dressing (*Please note that I do not measure this dressing… I shake and taste my way through it and it always turns out a little different but always delicious!)

1 Tbsp. Stone Ground Mustard

1 tsp. Ground Ginger (or fresh)

1-2 tsp. Soy Sauce

2-3 T Brown Sugar

1 tsp. Honey

1 Tbsp. Peanut Butter

Olive Oil

White Wine Vinegar

Dash of Pepper

Directions

S&P Chicken & cook on Grill.

Put all other ingredients in a large bowl.

When chicken is cooked, let cool, cube & add to bowl.

Mix Dressing and pour over top.

Toss everything together & Serve!

    I was looking for an Asian chicken salad to serve at a quilt retreat in a couple weeks. Found yours, and it looks wonderful! I was totally laughing about your grocery store adventure with your kids. My daughter-in-law called me from the store a couple months ago. She had spent more than an hour shopping for her “huge” list. When it was time to pay, she realized that she had forgotten her purse. She called in an absolute panic, and asked if I could come pay for her $200+ grocery store trip. I don’t think I’ve ever seen her look more frazzled! I even gave her money for a drive through lunch, which they never do! The boys were so excited! I think people forget how hard it is to be a hands-on momma! :-)
