5 Pink Drinks

I’m hosting a Girls Night IN & have been looking for a few delicious and ‘girly’ drinks to serve my friends (pregnant and not pregnant)!  Below are 5 Pink Drink Recipes that I’m excited to share with you… because we all get sick of tea & punch, right?  Some of these drinks have alcohol in the recipe and others do not.  A few of them could even be mixed as a non-alcoholic beverage and then you can add liquor to it when serving… Perfect!

Try one of these Pink Drinks next time you are in the mood for something tasty & refreshing! With or without a Spike!

Rhubarb Iced Tea

Recipe From: Martha Stewart Living

Ingredients

  • 8 stalks rhubarb, cut into 3-inch lengths
  • 8 cups water
  • 1/3 cup sugar, or to taste
  • Fresh mint sprigs, for garnish

Directions

  1. In a large saucepan, combine rhubarb and 8 cups water; bring to a boil, and simmer for 1 hour. Strain the liquid, add sugar to taste, stirring to dissolve, and allow to cool. Serve over ice with a sprig of mint.

Watermelon-Cucumber Cooler

Ingredients

  • 5 cups cubed seedless watermelon (about 1 1/2 pounds)
  • 1 large English cucumber, peeled and cut into chunks
  • 1/4 cup fresh lime juice (from 2 limes)
  • 2 tablespoons honey
  • 2/3 cup vodka
  • Ice
  • Cucumber slices, for garnish

Directions

  1. Set a large fine-mesh sieve over a large bowl or pitcher. In a food processor or blender, puree watermelon. Pour watermelon puree through sieve, pressing on solids with a rubber spatula (you should have about 2 cups juice). Puree English cucumber and pour through sieve into watermelon juice.
  2. In a small bowl or measuring cup, stir together lime juice and honey. Add to watermelon and cucumber juices, along with vodka. Adjust sweetness with more honey if desired. To serve, fill four glasses with ice and top each with cocktail. Garnish with cucumber slices.

Strawberry Lemonade

Ingredients

  • 1 pint strawberries
  • 8 tablespoons plus 2 teaspoons superfine sugar
  • 8 tablespoons freshly squeezed lemon juice
  • Seltzer water

Directions

  1. Puree strawberries and 2 teaspoons sugar in a blender. Set out two glasses, and spoon 3 tablespoons of the resulting strawberry puree, 4 tablespoons sugar, and 4 tablespoons lemon juice into each glass. Stir the lemonade, and add ice. Top off the glasses with seltzer water. Add more sugar if desired.

Berry Blend Juice

Recipe From: Martha Stewart Living

Ingredients

  • 1/2 cup fresh strawberries, hulls intact
  • 1/2 cup fresh or frozen raspberries, defrosted, if frozen
  • 1/2 cup fresh or frozen blueberries, defrosted, if frozen
  • Pinch of sea salt
  • Dash of raw agave
  • 4 to 5 Brazil nuts
  • 1 teaspoon coconut oil
  • 1 tablespoon bee pollen
  • Unsweetened coconut flakes, for garnish

Directions

  1. Place all ingredients except coconut flakes in the jar of a blender. Puree until smooth. Divide evenly between 3 glasses; garnish with coconut flakes.

Dazzling Raspberry Cooler

Recipe From: Betty Crocker

Ingredients

  • 4 boxes (10 oz each) frozen raspberries, thawed, undrained
  • 1 can (6 oz) frozen lemonade concentrate, thawed
  • 1 bottle (2 liters) ginger ale, chilled
Directions

In 4-quart Dutch oven, cook raspberries over medium heat 10 minutes, stirring frequently; cool slightly. Push through strainer with large spoon to remove seeds. Refrigerate raspberry juice at least 2 hours.

In large pitcher, mix raspberry juice and lemonade concentrate. Stir in ginger ale. Serve immediately over ice.
