This weekend, we’re having a dinner party with friends and I wanted to share with you my food thoughts! I found a new appetizer recipe that is easy to make and though it may seem simple and boring, its not! This dip is full of flavor and the different textures involved make it a perfect and yummy appetizer!
Since I still have a lot of tomatoes and basil in my garden, I think a fresh tomato, basil, mozzarella salad would be a perfect start to the main course: Grilled balsamic chicken and my ‘famous’ Penne with Vodka Sauce! (Its not my own recipe but its mine to keep and I’m passing it on to you!) The last time I made it was over Christmas and I’ve been craving it ever since! It is so good and I know this dinner party will be D-E-LICIOUS!
- APPETIZER -
Sesame Spinach Spread
1 cup Sour Cream
1 cup green onions, chopped
1 tsp. garlic salt
1/4 tsp pepper
1 heaping tsp sesame seeds, toasted
1 10 oz. package frozen chopped spinach, thawed and well drained
1 8 oz. can sliced water chestnuts, drained and chopped
1 box Toasteds Sesame Crackers
In small pan, toast sesame sesame seeds and set aside.
In large bowl, stir together sour cream, green onions, garlic salt, pepper, spinach and water chestnuts.
Put 1/2 sesame seeds in mixture, other half on top as a garnish.
- SALAD -
Tomato, Basil, Mozzarella Salad
4-6 Ripe Tomatoes
Handful Fresh Basil
1 large Buffalo Mozzarella
Slice tomatoes and buffalo mozzarella and clean and chop basil. (may leave whole too)
Layer on platter: tomato, mozzarella, sprinkle basil.
Sprinkle with S&P and drizzle EVOO & balsamic vinegar over everything.
Let stand or refrigerate for for 10 minutes before serving!
- MAIN DISH -
Penne with Vodka Sauce
2 Tbsp. Unsalted Butter
4 cloves Garlic, minced
1 small yellow Onion, diced
1/4 bacon, browned and chopped
1/3 c Vodka
28 oz. Tomato Sauce
1 C Whipping Cream
Red Pepper Flakes
Parmesan or Romano Cheese
Directions for 2 pounds Penne Noodles
Boil water for Penne.
In large saute pan, melt butter. Add garlic and onion. Saute.
Add bacon and cook until brown.
Add vodka & stir until its reduced by half.
Stir in tomato sauce and whipping cream. Simmer 10 minutes.
Season with S&P, red pepper flakes (to your liking) and parsley.
Pour over 1.5-2 lb.’s Penne & mix together
Garnish with Fresh Parsley & Cheese
And before you leave… YES, I started to decorate for Fall! I know its early; I just couldn’t help myself. This is my favorite time of the year!
