This is what I call a Lazy Mamas Crockpot Dinner! I came up with this dish one morning with no recipe, I wasn’t inspired by anything in particular; I opened my refrigerator and had carrots, pre-sliced mushrooms and chuck roast. That was dinner. You can see how lazy I was because I didn’t even cut the carrots, but with a little shake of this and little shake of that, dinner turned out comforting and delicious!!! Definitely worthy of a blog post!
The flavor was SO good; it was the first thing hubby said to me after taking his first bite! My whole family (hubby + 2 toddler boys) ate a full plate and I gave the leftovers to my dad the next day; they all really enjoyed it!
Ingredients
3-4 lbs. Chuck Roast
1 bottle Beer
1 can Beef Broth
1 package onion soup mix
1-2 Tbsp. Garlic powder
1-2 Tbsp. Italian seasoning
Sea Salt & Pepper
1 large package sliced mushrooms
1 package whole carrots
Directions
Place roast in crockpot
Add all other ingredients (lift meat with a fork to let some of the juices run underneath)
Cook on low for 8 hours
Serve over Mashed Potatoes (I boiled peeled russet potatoes, drained the water then added 1/2 stick butter, some 2% milk, fresh chives and s&p) *If you are really feeling lazy, add the potatoes to your crockpot instead of cooking & mashing.*
Garnish the dish with fresh or dried Parsley

I made this for my family last night for dinner and yummy nothing was left(we are a bunch of foodie piggies) we didn’t have any potatoes left so I just made egg noodles and it worked out thank you for this wonderful recipe
