Simple Italian Sausage Dinner

The boys and I spent the morning touring a local dairy farm and when our PiggyToes stepped into the market, I laid eyes on the most gorgeous & freshly baked focaccia bread.  YUM!

I had to serve it for dinner and decided to throw together this simple sausage dish for the main dish.  While you could definitely serve this over pasta, I cooked Organic Brown Rice which was a nice change for us!

Sausage Rice

Ingredients

1 pound Sweet Italian Sausage

EVOO

1 Yellow Onion, diced

2 tsp. Garlic, minced

1- 14 oz. can diced tomatoes

2 small packages Mushrooms, quartered

1 tsp. Italian Seasoning

1 tsp. Basil or handful fresh basil, chopped

S&P

Brown Rice

Parsley (for garnish)

Parmesan and/or Romano Cheese

Directions

In large skillet, heat EVOO and brown sausage over med-high heat.

S&P sausage.

Add garlic and onion.  Saute for 3 minutes.

Add mushrooms and tomatoes.  Saute for 3 minutes.

Add a little water to can of tomatoes and add to skillet if needed.

Add seasonings.

Turn heat to med-low / low and saute until everything is cooked together.  Let the flavors sit and cook for as long as you can/want; the longer the better.  Maybe 15 min.

Serve over brown rice (or pasta)

Garnish with parsley and freshly grated cheese.

PS.  Dessert is a no-go tonight… monkeys already had blue ice-cream at the farm ; )

    I made this tonight and it was so quick and easy and super delicious. My picky 3 year old even loved it and I can’t get him to eat anything. My husband loved it too and told me it was a definitely one he wanted me to make again. I had some spinach in my fridge that was going to go bad soon so I threw that in as well.
