I put together this salad as a side dish for our Memorial Day Picnic!
I opted out of adding pasta noodles just so this dish would scream, ‘I’m fresh & healthy!’ At picnics, you’ll find a handful of mayonnaise-y salads (which of course, we all love!) but no one will be able to pass up taking a scoop of this! It was easy to make and I’m excited to serve it!
6 Mini Seedless Cucumbers (cut lengthwise and then sliced)
1 carton Grape Tomatoes (halved)
3 cans Organic Beets (No salt & cut in quarters) * You can also use fresh beets too. Cooked & sliced.
2 cans Organic Chick Peas
1 can Black Pitted Olives (chopped)
1 Good Seasoning Packet mixed with EVOO & Balsamic or Red Wine Vinegar
Drain and Rinse Chick Peas, Beets and Olives.
Chop all Veggies as directed above or to your liking.
Mix dressing & pour 1/2 of the bottle over salad (or to your liking).
Chill & Serve!
This is a perfect picnic salad that is pretty too!
