I’m always looking for new ways to get my boys to eat fish and I have to admit, their favorite is when I bread it! Last night, I had this idea to make a patty out of it instead of dipping each piece of fish in egg and breadcrumb… Sort of like a salmon patty but with cod.
It turned out great and the boys had no clue that they were even eating fish. Roman said, “Thanks for this chicken, mama!” and then hubby came home from work and thought they were crab cakes. HA! My lips are sealed… try these for your little ones and let me know what you think!
5 pieces Cod
1 Handful Italian Style Bread Crumb
1/2 Yellow Onion, diced extra small
In food processor, chop cod until flakey.
In large bowl, whisk 2 eggs, S&P, parsley, onion.
Add cod and breadcrumb.
Form into 6 round patties.
In large skillet, heat EVOO over med-high.
Saute patties for about 5 minutes on each side.
Serve with steamed veggies!
While we’re on the topic of food… what’s with the Bounty Commercial where the little girl carries a big bowl of soup over to the kitchen table, spilling soup onto the floor every step of the way and then finally, another big spill on the table… They cut to the mom, and she’s smiling! Yes. SMILING! As if she could care less that her kitchen floor has 15 soup spills and another on the table. She smiles at her child, grabs a paper towel and lays it over the spilled soup.
I mean, is it just me or is that scenario totally unrealistic!?!
Would you ever let your kid get past spill #1 with a big bowl of soup and not rush over to them to grab the bowl and carry it the rest of the way to the table? Better yet, would you smile at them? For a moment, I actually thought I was a bad mom for most likely handling that situation waaaaay differently. And then I yelled at the tv, “Stupid Commercial!”
Don’t worry about spills with Cod Patties.
