Banana and Chocolate Chip Mini Muffins

I made these muffins for an after school snack and the entire batch was gone in 2 days!  Our oldest son Rocco comes home from full-day Kindergarten hungry so at his first sitting, I think he ate 4 or 5!

The batch makes about 2 dozen mini muffins.  Not only are they great to have for breakfast and snacking but they are the perfect amount to take to a play-date or school party too!

Ingredients

3 Ripe Bananas

3/4 cup Sugar

1 Large Egg

1 tsp. Baking Soda

1 tsp. Baking Powder

1/2 tsp Salt

1 1/2 cup All Purpose Flour

1/3 cup Unsalted Butter

1 handful Semi-Sweet Nestle Chocolate Chips

Directions

  1. Preheat Oven 375
  2. In a kitchen aid mixer, mash 3 bananas with a fork.
  3. Add sugar and egg.  MIX WELL.
  4. Melt butter in microwave and add it to mixer.
  5. Make a well in the middle and add all of the dry ingredients.
  6. Bake for 9-11 minutes.

  My family loved these 2 bite mini muffins!  Especially this one who sneaked one in his pocket for nap-time! ; )
