Today is Roman’s 4th Birthday and if you’ve been following our PiggyToes for some time now, you know that Macaroni & Cheese is Roman’s most favorite food in the entire world.
When Roman is having a bad day? Mac and Cheese.
When Roman is having a good day? Mac and Cheese.
When Roman goes to a restaurant? Mac and Cheese.
When anyone ever asks Roman what he wants to eat? Mac and Cheese.
Needless to say, when his birthday rolls around, this is his dinner request. And chicken. It’s always, “Mommy. On my birthday, I want mac and cheese. And chicken. And green beans.” And that’s that. I’m making Macaroni and Cheese for his special dinner!
So, let’s talk about the ‘how-to’. I’ve never made macaroni and cheese in the crock-pot, but since we had late afternoon plans to go bowling, I did some ‘crock-pot recipe research’ and came up with this Crock-Pot Macaroni and Cheese.
Next time you want your house to smell like heaven, make this for dinner.
16 oz. Elbow Macaroni Noodles, cooked
2 cans evaporated milk
1 dunk or, ummm… 1/4 cup or so of 2% milk
5 cups Sharp Cheddar Cheese
1 stick unsalted butter
1 tsp. salt
1 tsp. ground black pepper
1 tsp. paprika
2 tsp. Ground Mustard
Cook macaroni for 5 minutes. In other words, under cook the noodles.
In the same pot, melt the stick of butter.
Add half of the cheese to the pot and stir.
In crock-pot, put milk, butter/cheese mixture and stir.
Add eggs and whisk as to not cook the eggs.
Add the rest of the cheese and all seasonings. Stir well.
Cook for 3.5 – 5 hours, stirring every so often.
(Note: I was not home and did not stir it once. I’m wondering if that’s why it turned out a little ‘clumpy’ as you can see rather than smooth. Regardless, it was DELICIOUS and I’ll definitely make it again! And Roman loved it too which is a WIN in my book!)
