I know. You might be one of those that hears the word ‘celery’ and thinks, ‘Ew. No thanks. Not my thing.’ Before you knock this dish, try it! My mom made it for the boys and I and I had to write down the details (and share it with you too, of course!) I’m telling you, I don’t know where this soup has been all of my crock-pot life… It is so good! The perfect ingredient to make this a comforting and creamy dish!
Weather man calling for snow? Put this together in your crock-pot, turn it on low and dinner will be waiting for you when you come in from sled-riding!
2 cans Fat Free Cream of Celery Soup
4 boneless, skinless chicken breasts (you can also throw in a few chicken thighs too, if you like dark meat)
1 large yellow onion, sliced
1 lb. carrots, peeled and cut in chunks
1 container whole button mushrooms
Put 1 can of soup on the bottom of crock-pot
Put chicken and vegetables on top.
Season and then pour the other can of soup on top.
Turn crock-pot on low for 6-8 hours.
Serve over buttered egg noodles!
